Bristol’s bakery on wheels serving ‘visual works of art’ has been named one of the best in the country – and here’s where to find it

We’re not short on incredible bakeries in Bristol, but two of the most lauded have to be Farro in St Pauls and Hart’s under Temple Meads. Unsurprisingly, they both get mentioned in the Good Food Guide’s ‘Britain’s Best Bakeries 2026’, but are this year joined by the unique bakery on wheels, Hilda.

What are Britain’s Best Bakeries 2026?

Good Food Guide’s 50 Best Bakeries 2026 celebrates the “artisans rewriting the rulebook”. This year’s 50 includes 22 new entrants with skills on show that are rivalling the very best restaurants in the country—“from micro bakeries operating out of a single oven to destination spots worthy of a cross-country detour.”

Chloë Hamilton, editor at the Good Food Guide, said: “Choosing just 50 winners was an almost impossible task. From wood-fired sourdough in Perthshire to a central London café peddling pains au chocolat that take you straight to the streets of Paris, one thing uniting them all is sheer unadulterated deliciousness.”

What makes Hilda so special?

It started as a simple idea: Will Prosser baking goods in his converted Westbury Park garage and driving them around in his mobile cafe. Hilda now attracts “a devoted community around it wherever it parks up,” according to the Good Food Guide, which can be found in Clifton, St Werburgh’s and Bedminster over the weekend.

You won’t find any bread at this “small but mighty bakery on wheels”. Still, you will find plenty of jaw-dropping pasties, like “laminated tarts piled with seasonal fillings such as roasted cherries and bay-leaf custard are visual works of art and fabulously delicious too.” Plus, pain au chocolat, canele, custard tarts, hot cross buns, and so much more.

Where can I find Hilda?

You can find Hilda outside St John’s Church on Whiteladies Road in Clifton on Thursday (from 8am), Friday and Sunday (from 9am); Clouds on Mina Road in St Werburgh’s on Saturday (from 9am); and Cor on North Street in Bedminster on the second Sunday of each month (from 9.30am).
